Ingredients
Warm Caper Relish
1 cup diced yellow zucchini
1/4 cup RO*TEL Diced Tomatoes & Green Chilies
1 tablespoon olive oil
1 tablespoon sherry vinegar
1 tablespoon capers
salt and pepper
Creamy Sauce
1/4 cup rotel mild tomatoes
2 tablespoons dijion mustard
2 tablespoons olive oil
salt & pepper
Hot Dog
4 hot dogs
1 cup finely shredded sharp chedder cheese
1/2 cup finely shredded Parmasean cheese
4 hot dog buns
1/4 cup micro-greens
Preparation

1. Preheat a griddle to 425°F.
2. In a mall bowl mix zucchini, rotel, olive oil, sherry vinegar, and season with salt & pepper. Place mixture onto griddle, let sit for 3-4 minutes before stirring.
3. Mix together the chedder and parm cheese.
4. Split the hot dogs by length and place face down onto the gridde.
5. Grab a large handful of cheese and place it on the driddel, place the bun, open and press it face ide down onto the cheese, making sure there is cheese surrounding the bun. When large bubbles form, flip the bun and remove from heat.
6. Check the zucchini, stir, cook until golden, about 2-3 minutes.
7. Top the cheesy bun with the hot dog, relish, creamy sauce, and micro-greens.
