Mexican street corn salad
This Mexican street corn salad is so easy to make, the cooking method of the corn is what gives this side dish the special flavor, if you don't have time to grill the corns, you can use frozen charred corn kernels. Another thing that I love about this recipe is that reminds me so much my childhood, besides the jicama con chile and cheese, a roasted corn was my favorite Sunday snack after church.

Ingredients
• 4-5 large grilled corn on the cob (or frozen charred corn)
• 2 tbsp olive oil mayonnaise
• 2 tbsp jocoque or grade A sour cream
• 1/2 crumbled queso fresco
• 4 key limes
• 2-3 tbsp Valentina sauce or salsa macha ( or your favorite hot sauce)
• Salt
Preparation
• Mix the mayo and jocoque(sour cream) and add a little bit of salt
• Slice the kernels from the cob, if using frozen follow instructions on the package.
• Add the mayo-jocoque mix
• Add the cheese
• Squeeze the key limes on top and mix very well
• Add the amount of hot sauce you are comfortable with, you can dd salsa macha or your favorite hot sauce.
