Tuna Tartare
Come see how I make my famous tuna tartare.
Ingredients
Tartare
1/2 lb of sushi grade Tuna, cut into small cubes
4 scallions finely chopped
2 tbsp toasted sesame seeds
1 avocado, smashed with a fork
A handful of cilantro, chopped
A handful Thai basil, chopped
1 tbsp lime juice
pinch of salt & pepper
Sauce
2 spring onions or chives, chopped
2 tbsp ponzu or soy sauce
1 teaspoon sesame oil
1 tbsp ume plum vinegar
1 tbsp lemon olive oil
1 teaspoon yuzu juice
1 teaspoon dry Aleppo pepper
Fresh black pepper
Preparation
Instructions
1. Add all the sauce ingredients to a bowl and mix together. Set aside.
2. Add the cut up tuna, green onions, Thai basil and sesame seeds directly to the bowl of sauce and mix until combined.
3. in a separate bowl, mix together the smashed avocado, cilantro, lime juice, salt, and pepper.
4. Plate your tartare by using a cake mold (stainless steel circular ring).
5. First using a spoon put the tuna on the bottom, add avocado on top, gently remove the mold, add a little more tuna on top and decorate with microgreens.
Notes
Serve these up with your favourite rice crackers on the side or fill up the beautiful sesame cones.
Garnish your tartare with sriracha, cilantro, and sesame seeds, baby radishes, microgreens.
