I love simple, quick, and easy. Yes, I’m very fast in my kitchen, I fly, but nevertheless... it has to make sense, it has to be delicious, fresh, healthy, and beautiful of course. It’s all about the technique that never fails and the simplicity of connection. It’s about the flow. I never have a plan of what I will cook. When I go shopping I buy what attracts me, what’s in season, and I try to keep it as authentic as it gets. The flavors come together in momentum. 

I think in produce and get inspired by ingredients, an unusual vegetable or fruit. My mind is like a computer, I know what follows next or comes beforehand. I don’t use recipes, they confuse me. I’m very fluent in global cuisine, I like pushing the limits, and exploring the new and the unknown to me. I want to create something I’ve never done before or perfect what I thought needed an improvement. 

Flowing in the kitchen is a creative and almost meditative process for me. I always have every herb in my fridge and I believe that they are the essence of the most flavorful and unique recipes. Well, that’s my Armenian heritage. Something I am proud of, I grew up with, and that runs in my blood. There is no life without the fragrance of herbs. Dishes are still and not fully alive. Oh and spices! I am a wizard of spices. They are so mysterious and luxurious in a simple way, but so loud and sexy at the same time, I love the tactile feel of them.

The rest I can’t explain, the presentation part, that happens within 2 minutes. I just follow my body language, my hands, fingers, and eyes do it for me. I don’t think about it, I just go for it and that is my most favorite part, decorating it and watching my family and friends enjoy it with pleasure and gratitude.
