Thuy Pham started cooking at age eight, but her journey to a professional kitchen began as a pandemic side hustle. When restrictions crushed her career as a professional stylist, Thuy took to livestreaming to show the world her vegan pork belly and other plant-based recipes. The public loved it, and when people started reaching out to ask where they could buy her food, the seed for her restaurant Mama Dut was planted--first as a pop-up, then a bricks and mortar location, and now one Portland’s hottest restaurants known for fun, bold, expressive plant-based cooking inspired by the flavors of Thuy’s Vietnamese American childhood. Thuy is now working on a second location, and has quickly become one of the most recognizable members of the Portland food community.
