Sea Bass

Place medium skillet on medium high heat.

Pour in oil and spread across, coating whole pan.

Season your fish evenly on both sides.

Once pan is hot, place in your fish to hear a nice sear sound beginning.

Cook on one side for about 3 minutes, then flip on other side to cook again for 3 minutes.

Bring heat down to medium and add butter.

Braise the fish with the butter (you can add garlic and herbs to bring out more flavor)

Once done place on paper or rack to dry off excess oil

In medium sauté pan. Bring to medium high heat. Pouring in oil.

Add garlic, peppers, and onions. Cook until vegetables start to sweat or become translucent.

Add rice to pan and start to sauté rice and vegetables together.

Pour in chicken stock along with black eyed peas.

Season with salt, Cajun seasoning, and paprika to taste.

Finish with chopped parsley
