Potato & Steak Bite Appetizer
This is a quick and easy recipe using Portland Salt Co. seasonings.
Ingredients
1 pound sirloin steak, trimmed and cut into 1/2-inch cubes
4 tablespoons olive oil, divided
1 teaspoon Portland Steak Salt
1 pound potatoes, cut into 1/2-inch cubes
1 ½ teaspoons Portland Pita Salt
2 tablespoons unsalted butter
2 tablespoons minced parsley
sprigs of fresh tarragon or rosemary
toothpicks
Preparation
1. Preheat the oven to 425°F. Line a rimmed baking tray with parchment paper.
2. In a medium bowl, combine steak, 2 tablespoons olive oil, and steak salt. Let marinate for at least 15 minutes.
3. Place potatoes in a medium bowl; toss with remaining 2 tablespoons olive oil and pita salt. Place on prepped baking tray, roast in oven for 25-30 minutes, until tender and golden brown.
4. Heat a 12-inch cast iron skillet over medium-high heat, until hot. Add steak cubes, let sit for 2-3 minutes without touching to create a crust on one side. Flip cubes, let sear, 30-seconds-1 minute. Shake skillet, let sit 30 seconds, until internal temperature is 120°F for medium rare, or steak has a nice crust on one side and browned all over.
5. Turn off heat; stir in butter while scraping up bits from the bottom of the pan. Sprinkle with fresh parsley.
6. Alternate potato cube and steak on a skewer, garnish with fresh herbs.
