Lunchtime Lettuce Wraps

I am cooking up some lettuce wrap with my fave Oregon-based businesses. Join me live for this quick and easy lunchtime recipe.

Ingredients

1/4 cup Marshall’ Red Chili Lime Haute Sauce

8 ounce can water chestnuts, chopped

1 tablespoon soy sauce

2 tablespoons extra virgin olive oil

1 pound ground chicken

1/4 cup Tan Tan Hoisin Sauce

1 head romaine lettuce, washed

1/4 cup diced cucumber

1/4 cup shredded red cabbage

1/4 cup chopped peanuts

1/4 cup fresh basil


Preparation

Drain and roughly chop the water chestnuts. In a medium bowl, stir together the chestnuts, soy sauce, and Red Chili Lime Sauce – set aside.

In a medium non-stick skillet over medium-high heat, add the oil. Once shimmering, add the chicken. Let cook until browned, about 4 minutes. Add the hoisin sauce, and stir, until coated. Add the chestnut mixture and stir again. Let cook 2-3 minutes untouched. Continue until no liquid remains.

Wrap in lettuce leaves, and garnish with cucumbers, cabbage, scallions, peanuts, and basil.
