Rainbow Crunch Brown Butter Spelt Chocolate Chip Cookie Recipe

Ingredients

2 sticks butter, room temperature
1 stick butter, browned and cooled
2 sugar
2 eggs
2 cups Spelt
2 cups All Purpose Flour
2 teaspoon salt
1.5 teaspoon baking powder
1.5 teaspoon baking soda
1 cup dark chocolate
1 cup milk chocolate
Rainbow Nonpareils Sprinkles

Preparation

1. In a small sauce pot melt and brown butter over medium heat. Remove from heat and cool to room temperature.2. Cream together butters and sugars in a stand mixer on speed four. In another bowl mix together your dry ingredients with your hand. Set aside.
3. Turn off mixer. Add eggs and continue to mix till homogenous. With the mixer on 2 slowly sprinkle in dry ingredients till incorporated.
4. Add chocolate and raise speed to 4 to break Chocolate up a little.
5. Scoop into a wide bowl of rainbow sprinkles. Coat cookies completely.
6. Preheat oven to 350. Place cookies on a sheet tray with parchment 2 inches apart. Bake for 11-14 minutes till golden around the edges. Cool slightly. Enjoy!!!!
