Lemon Energy Balls

Full of good-for-you nourishing ingredients and lots of fresh lemon flavor, these little balls pack a zesty punch to help you and your kids power through your days. Serve them as a healthy sweet treat with school or work lunches, an afternoon pick-me-up, or after school snacks. Super simple to make, the kids will have a blast helping you in the kitchen!

Ingredients

1 cup Medjool dates (about 12)

125 grams | 1 cup almonds or almond flour

50 grams | 1/2 cup GF rolled oats

40 grams | 1/2 cup desicated coconut +

more for coating

12 grams | 1 TBSP chia seeds

10 grams | 1 TBSP ground flaxseed

10 grams | 1 TBSP hemp seeds

5 grams | 1 tsp salt

28 grams | 2 TBSP raw organic honey

40 grams | 1 lemon, juiced + zest

Preparation

1. Place all dry ingredients in food processor and pulse until finely ground.

2. Add all liquids and pulse until comes together as a slightly tacky dough.

3. Portion into 25 grams (or almost 1 ounce) and roll into balls. Toss in extra coconut.

4. Refrigerate for up to 5 days or store in the freezer for longer life.
