Candied Nuts

Just for you, here’s my basic ratio for candied/crystallized nuts. Delicious simply as is or feel free to play around with different sugars, spices, or herbs to make them your own. Perfect for snacking, adding to cheese boards, garnishing salads and desserts, or homemade gift-giving, these nuts are so simple you’ll be able to make them anytime you want.

Ingredients

150 grams | 1 ½ cups nuts, toasted (except for walnuts)

60 grams | ½ cup sugar

2.5 grams | ¼ tsp salt

*feel free to play around with different sugars, spices, or herbs to make them your own

Preparation

1.     Place sugar and salt in sauté pan. Add water to make sandy.

2.     Cook sugar until water evaporates and turns syrupy and bubbly. We are essentially cooking the sugar syrup to soft ball stage, around 240F, but there won’t be enough to read on a thermometer.

3.      Remove pan from heat and add nuts, stirring constantly using a wooden spoon, until sugar begins to crystalize around the nuts.

4.     Remove from heat and allow to cool.

5. Store in an air-tight container.
