My specialties are traditional to modern Latin-ish foods with fun riffs (I am Panamanian and Cuban) and I am deeply interested in how immigration evolves cuisines.  I develop recipes for Eater, The Kitchn, Simply Recipes, The Spruce Eats and more. Originally from Panama, I have lived in Hawaii, Japan, Madrid, Virginia, and am currently based in New York City. I was recently on the TODAY Show with Al Roker, Bon Appétit, NY1, and am frequently featured as a culinary expert.  I love everything except for ketchup and eggs Benedict.
