Watermelon Gazpacho
This velvety watermelon gazpacho is refreshing and ideal to enjoy and prepare during a hot summer day. Join me while I prepare this traditional Spanish cold soup with a twist.
Ingredients
3 cups Watermelon, cubbed
3 medium Roma tomatoes, cut
1 medium Red bell pepper, cut
1/2 medium English cucumber, cut
1/8 medium Onion, cut
1/2 medium Mango, cut
1 large Garlic
1/4 bunch Basil
2 tbsps Olive oil
1 1⁄2 tbsps Red wine vinegar
1 tsps Sea salt
1/2 tsps Pepper
Preparation
Leave few pieces of watermelon, mango and cucumber to decorate the plate.
Blend the watermelon, tomatoes, red bell pepper, mango, onion, garlic and few of the basil leaves, until smooth.
Pass the mix through a colander.
Return the mix to the blender, add salt, vinegar and while the blender is running add the olive oil in a steady stream and mix for few more minutes, to have a velvety emulsion.
Serve the gazpacho, decorate the dish , crush some pepper on top and ENJOY!
