Citrus Cut-Out Cookies

These citrus cookies are one of my favorite cookie recipes. The cookies are in between a shortbread and a sugar cookie, are perfect to cut out shapes, they keep their shape and don’t grow much after baking, making this very suitable to use for cookie decorating.

Take the butter and egg out of the fridge 15-20 minutes before preparing this recipe and make sure to have a clean surface ready to roll out your cookie dough and have a baking tray lined with parchment paper or a baking mat.

When you bake these cookies you need to let them cool down for a little bit in the baking sheet so they harden a little bit and then move them to a cooling rack, like they are so soft they are more fragile when they are freshly baked. 




Ingredients

10 tbsps Unsalted butter

6 tbsps Powdered sugar

1 medium Egg yolk

1 medium Orange zest

2 small Key lime zest, Zest

2 tsps Pure vanilla extract

2 cups Cake flour, plus more for rolling pin and surface

Preparation

Pre-heat oven at 350ºF.

1.- Sift the flour, set it aside.

2.- Sift the powdered sugar, set it aside.

3.- Add the butter to your mixing bowl and start mixing at medium speed for 1 minute. Gradually add the powdered sugar and increase the speed to medium and mix for about 4-5 minutes until it is light and fluffy .

4.-In a small bowl mix the the egg yolk with the zest ( orange/limes) and the vanilla extract. Set aside.

5.- When your mix of butter and sugar is ready add the mix of step 4 and continue mixing at the same speed until everything is well incorporated.

6.- At the lowest speed add the flour in two or three additions, mix for 1-2 minutes until a ball has formed.

7.- Roll out the cookie dough and refrigerate.

8.- Cut out the shapes, place them over the prepared baking trays and bake for 10-13 minutes until the edges starts to golden. When you bake these cookies you need to let them cool down for a little bit in the baking sheet so they harden a little bit and then move them to a cooling rack, like they are so soft they are more fragile when they are freshly baked.

9.- Transfer them to a cooling rack.

Royal Icing Recipe

The royal icing used to be known as the “egg white icing” and it dates back to the 1600’s. It was commonly used to decorate cakes and also was known as “edible glue” due to its quick hard drying properties.


In 1840 this icing changed its name to :”Royal Icing”, when Queen Victoria’s married Prince Albert. It was the first reported wedding cake to be decorated using a white icing and its intricate decoration. This icing was subsequently named Royal Icing in honor of this wedding cake.

I have been using this kind of icing to decorate cookies and over the years I came up with this easy but wonderful recipe.
