Asparagus empanadas
Asparagus season is in full swing, let’s make some empanadas!
Ingredients
7 ounce Puff pastry
1 cups Asparagus
1 cups Cherry tomatoes, cut in half
1/2 medium Onion, diced
2 tbsps Extra virgin olive oil
5 slice Camembert cheese
1 medium Egg wash
1 pinch Salt and pepper
1 sprig Parsley
Preparation
Pre heat oven at 400ºF
1.- Peeled the asparagus and cut them in 2 in pieces. Sauté the asparagus until they are a little bit tender. Seasoned with salt and pepper
2.- In another pan sauté the onions, add the cherry tomatoes, season with salt and pepper, lower the heat and let the sauce reduced. Add the asparagus, stir. Set aside.
3.- Extend the puff pastry wit a rolling pin, cut out 6-7 inches circle, add pieces of Camembert cheese and a little bit of the asparagus sofrito. Add a little bit of egg wash around the puff pastry and fold the circle to form an empanada, with a fork pinch the top of the empanada and brush egg wash.
4.-Place the empanadas over a baking sheet lined with parchment paper. Bake for 30-35 minutes until golden.
