Campechanas
Campechanas are crunchy pillows of puff pastry with a top layer of golden caramelized sugar. Its name come from the Mexican state of Campeche where these kind of sweet bread ( pan dulce) became very popular decades ago. You can look for them in your favorite Mexican bakery or you can make your own, following this simple recipe.
If you have a good puff pastry recipe you can prepare it, or use store bought frozen puff pastry to prepare these delicious crunchy treats.
You can find vegan and regular puff pastry in most super markets, both of this works perfect.
Ingredients
12 ounce Puff pastry, thawed
4 tbsps Butter, room temperature
1 cups Sugar
Preparation
Pre- heat oven at 375ºF
1.- Greased a baking sheet with butter. Melt the reminder butter. Set aside.
2.- Defrost the dough in the refrigerator 2-3 hours before you will prepare the campechanas. Your dough needs to be cold when you are going to start making them.
3.- On a floured surface extend the dough evenly with a rolling pin, so the dough is a little bit thinner.
4.- With a knife cut 3 by 7 inches rectangles and place them over the baking sheet. You can cut longer or shorter pieces.
5.- With a pastry brush or your finger varnish the dough rectangles and sprinkle sugar on top.
6.- Bake for 20-25 minutes until the top of the campechana is golden. Broil for 1 minute so the sugar caramelize a little bit more, pay attention in this part was this can easily burned out.
7.- Transfer them to a cooling rack.
