“Olive Oil Lace” w/Corto Olive Oil

A delicate and crunchy garnish for your sweet and savory dishes.

Ingredients

80 milliliters Water

21 grams Olive oil

14 grams Flour

1 pinch Spice

1 tbsps Olive oil, For cooking

Preparation

Blend all ingredients together and add to squeeze bottle or small measuring cup.


Heat a non-stick skillet to medium high. Add a tablespoon of olive oil, followed by a generous squeeze or pour of the batter to the pan, and let it sizzle. tiny pockets of water evaporate and steam while the oil and flour crisp up in the pan, creating a lace like pattern. The batter is meant to be thin but too thin and it won’t crisp, too thick and you’ll get a chewier texture. Once the edges begin to brown and cook all the way to the middle, then it’s ready.

Lift carefully with offset spatula or tweezers, a fork will do as well. Set on paper towel to drain excess oil and use as delightfully delicate & crunchy topper.

Treated myself to a “midday indulgence”. Always seeking balance, I love something savory with my sweet, a bit of texture, playfully layering flavors, and whimsical presentation (I mean why the hell not). Making special components to add a little extra umph… I had the pleasure of pairing @corto_olive “Truly” extra virgin olive oil with this luscious parmesan ice cream from @saturatedicecream. Incorporating it as a buttery yet fruity element to an “olive oil lace” and warm poach to plump up some dried prunes. Finished with tangy pineberries…and one can’t help herself in the presence of edible flowers in all forms. A few pops of fresh star flowers from @sowandharvestfarms , a flutter of my rose Aleppo salt and it’s complete.
