Karl Holl is a chef, farmer, forager, and the Founder of Forager Goods & Company. A graduate of New England Culinary Institute, Karl has cooked at celebrated restaurants in Napa Valley, Vail, and San Francisco. To further connect food with place, he joined Outstanding in the Field for a year, traveling the country to create unique dining experiences at 90+ farms. In 2013 He started a farm of his own in Oregon, fulfilling a life-long dream of growing and raising everything he cooked while also developing strong relationships with farmers, chefs, and wineries across the Pacific Northwest. In 2017, Karl had a permanent residency at Downtown Portland’s Park Avenue Fine Wines out of which he operated his in demand catering and events company, Spatzle & Speck, where he was named Portland Monthly’s Chef of the Year in 2018. 

When the pandemic forced him to shut down his business in 2020, Karl turned a year of constant pivots and struggles into an opportunity to share his deep love of forests, food and building community by creating Forager Goods & Company, Launched on earth Day 2021.

In addition to developing FG&CO and getting into the forest every chance he gets, Karl continues to operate Spatzle & Speck for small private events and also serves as Culinary Director of Smith Teamaker.
