Cole’s Crunchy Chicken Tenders
Ingredients
1 lb Chicken Tenders, or breast cut into tenders
1 cup All Purpose Flour
2 eggs, beaten
¼ cup whole milk
1 cup panko breadcrumbs
2 cups oil (I prefer sunflower or safflower)
Onion Powder, to season flour
Garlic Powder, to season flour
Salt and Pepper
Preparation
1) Lightly season raw tenders with salt and pepper
2) Prepare 3 separate trays, mix eggs & milk; seasoned flour; breadcrumbs
3) Dredge tenders in flour, then egg mixture, then breadcrumbs
4) In a cast iron pan, pot or electric fryer, fry tenders in 1” oil at 350f until fully cooked (about 5 minutes in cast iron; note flip mid-way to cook evenly on both sides/about 4 minutes in an electric fryer)
5) Place onto paper towel to rest
6) Season immediately after frying. Serve.
