Vegan Peas & Mushroom Tartine

Hi Friends!

I am so sorry, but have to postpone Vegan Tuesday to tomorrow- Wednesday. We'll be making crunchy fresh Mushy Pea and Marinated Mushroom Tartines.😋

I'll see you in the kitchen tomorrow!

Want to cook along? Here's the ingredient list:- Baguette, sliced bread, or whatever bread you have at home- 1 slice per serving- 2 c of peas (frozen and defrosted OK- enough for sliced bread tartines)- 1 lemon- 1 scallion- 1 clove garlic- 1 handful of your favorite mushrooms per tartine (I'll be using maitake, enoki, and king trumpet)- a few sprigs of mint and/ or whatever tender herbs you have on hand- olive oil and salt to taste
