MY STORY
Chef Nicoletta Grippo was born in the beautiful Southern Italian part of Canada; Vancouver, British “Calabria”. It was in Vancouver that her curiosity for Italian food began. Growing up as the oldest of nine in a food-centric home she began cooking at a very young age. She describes her upbringing as being in an “Italian time-capsule”; “We had ducks, pigs, chickens and rabbits when the neighbors didn’t complain. We made prosciutto, cheese, sausages and salumi together. I would sit on the deck for hours peeling hundreds of pounds of beans for the winter. We canned 800lbs of tomatoes for our family; our garden looked like Eden… I was the weird Italian kid in class”
In Vancouver Nicoletta opened Gelateria Dolce Amore and DiVino Wine Bar. She later moved to New York City where her love of her culture and culinary pursuit of excellence blossomed. She travelled teaching culinary for a school in Italy for many years before opening Caramello; a Gelato and Pastry shop in Brooklyn New York. As her final endeavor before moving on from New York City, Chef Nicoletta worked as the Head Chef of Special Events and La Scuola at the prestigious Eataly Flatiron. There Nicoletta was fortunate to learn and work alongside some of the greatest chefs the world over.
Chef Nicoletta has since moved to Southern California and started Do or Dine Catering a true Farm to Table Open Fire experience. She has since Appeared on The Food Channels Man Fire Food.
These days you can catch her sharing snippets of her Sunday Suppers, sharing secrets of the kitchen, pasta slinging and throwing in some Italian comedy and antics in between.
