Zero waste tomato fritters!
What do you do with your tomato pills course and other waste from the tomatoes and onions make tomato Frickers of course this recipes easy because, you are just blending everything and adding cornmeal and flour and just frying up.
Ingredients
4 ounces all-purpose flour1
1ounce cornmeal
1 pound ripe tomatoes, finely diced & all tomato tops & pieces you would usually throw out
8 ounces white onions, finely diced & peels. 2 ounces scallions, finely diced
½ ounce fresh spearmint leaves, finely chopped.
1/2 ounce fresh parsley leaves, finely chopped
2 ounces tomato paste
1/2 teaspoon fine sea salt
1/2 teaspoon black pepper, finely ground
1 quart oil, for frying
Preparation
In blender add tomato pieces, onion, herbs, tomato paste & purée till smooth, the mix in bowl with flour & cornmeal. Heat oil to about 375 and spoon small ball into the oil. Fry and then remove & drain on a paper towel.
