Gambas Al Ajillo
Quick & Easy flavorful shrimp with crostinis in 10 minutes or less!
Ingredients
1 LB Shrimp, Peeled & Deveined
1 Lemon, Halved
6 Garlic Cloves, Thinly Sliced
High-Quality Extra Virgin Olive Oil
1/2 Tsp Diamond Crystal Kosher Salt
1/2 Tsp Paprika
Red Pepper Flakes TT
1 ½ Tbsp Butter
1 Handful Parsley, Finely Chopped
1 Baguette, Thinly Sliced
Preparation
Preheat oven to 350 F. Thinly slice a baguette on a bias. Toss crostinis with a little bit of oil and salt and pepper. Bake on a baking sheet for 7-10 minutes or until crispy.
Meanwhile, heat a large pan on medium heat. Once hot, add a generous glug of olive oil, thinly sliced garlic, and 1 tbsp red pepper flakes. Stir for 45 seconds.
Add shrimp to the pan and generously season with salt and paprika then cook for 1 ½ - 2 minutes. Add a 1 ½ tbsp butter and stir shrimp around in the garlic-y, buttery oil mixture until shrimp is cooked through, about 3-4 minutes total cooking time.
Turn off the heat, add in freshly chopped parsley and lemon juice. Set shrimp aside in a serving dish and tent with foil.
Dip toast into shrimp and GRUB!
