Cranberry Ham Sliders with Bacon Butter, Pineapple, and Arugula

Ingredients
1 large Sam's Choice Boneless Spiral Cut Brown Sugar Double Glazed Ham
1/2 stick Unsalted Butter
4 sprig Fresh Parsley, leaves and stems minced
4 slice Wright Thick Cut Hickory Smoked Bacon
1 cans Sliced Pineapple Rings
1 pints Great Value Maraschino Cherries
1 cans Dr. Pepper
1 tbsps Smoked Paprika
1 drizzle Grapeseed oil
1 packet Sister Schubert's Parker House Style Yeast Rolls, 11 oz.
Preparation
1 pack - T Marzetti Sister Schubert’s Warm and Serve Yeast Rolls
Bake based on instructions

Bacon butter
1 stick unsalted butter
4 pieces - wright thick cut - hickory bacon
Fresh Italian Parsley 4 sprigs, leaf, and stem minced
Mince Parsley
Render bacon and allow both bacon and fat to cool slightly
Mince the bacon
In a mixing bowl
Add softened butter
Minced parsley and bacon
And bacon fat (notes you don’t want the bacon fat to be liquidy but you don’t want it fully solid either)
Mix well
Roll into a log, wrap in plastic, and chill in the fridge

1 Jar Great Value Maraschino Cherries
1/4 can of dr. pepper
1 Tablespoon smoked Paprika
Toothpicks

Place Ham in a disposable pan or oven-safe dish
Took pick cherry and attach pineapple rings and stick them on the outside of the Ham
Mix doctor pepper and paprika and pour over ham
Cover with foil and bake for 10 minutes
Uncover and back in for 20 - 30 minutes
Basting every 5 minutes
Reserve all the tooth picked Cherries
And cut the pineapple rings in quarters to save for our sandwich

Cranberry Jelly
1 can Ocean Spray Jellied Cranberry Sauce
1/2 cup water
1/2 c sugar
1 teaspoon Lemon zest
1 pinch of kosher salt
Assembly
In a pot add all ingredients and whisk until it comes together smoothly
Put in an air-tight container in the fridge
Cranberry Vinaigrette
1/4 Cup of Cranberry Jelly
1 teaspoon Grapeseed oil
2 teaspoons white distilled vinegar
1 teaspoon kosher salt
2 teaspoons ground pepper
Assembly
In a mixing bowl oil, vinegar, salt, and pepper
Mix well until homogeneous
Add in cranberry jelly until fully incorporated
Leave ham in large slices but cut in half lengthwise
In a sauté pan
Add 1 to 2 teaspoons of Grapeseed Oil
Once the oil is shimmering add Ham and allow to sear/caramelize on both sides
Slice cooled yeast rolls in half horizontally
In a sauté pan add bacon butter slices and allow to melt over medium heat
Gently sear the outsides of the rolls getting a very little color
Flip and sear the insides on the roll allowing them to be crispy and golden brown in color
In a mixing bowl add 1/4 container Marketside Organic Baby Arugula ( cleaned and dried Arugula )
Coat with 2 teaspoons of Grapeseed oil
Season with Salt and Pepper to taste
Add vinaigrette to arugula - toss and coat well
How to layer the Sandwich
Starting from the bottom half of the roll
Add Mayo and a dash of hot sauce
Fold on ham in half and place it on the roll
Add the second slice of halved ham layering the fold on the opposite side - to create height and balance
Add 1/4 a pineapple ring
Add seasoned Arugula
Top with the upper half of the roll and toothpick roasted cherry
In a mixing bowl add 1/4 container Marketside Organic Baby Arugula ( cleaned and dried Arugula )
Coat with 2 teaspoons of Grapeseed oil
Season with Salt and Pepper to taste
