Blended Lamb Burger with Lion’s Mane Mushrooms, Whipped Feta and Cucumbers

Ingredients
1 pound ground lamb
½ cup lions mane mushrooms, minced
1 TBSP za’ataar
Salt and pepper to taste
2 TBSP EVOO
1 cup feta
½ cup labne or whole Greek yogurt
1 tsp Aleppo pepper
2 TBSP EVOO
1 Persian cucumber, thinly sliced
1 shallot thinly sliced
1 TBSP EVOO
Juice and zest of 1 lemon
¼ cup chopped kalamata olives
Fresh mint
Salt and pepper to taste
Preparation
In a large mixing bowl combine lamb, Lion’s Mane and za’ataar and fold together. Form into two burger patties and season with salt and pepper. Heat EVOO over high heat in a cast iron pan and brown for 2-34 minutes per side.
Meanwhile whip feta, labne, Aleppo pepper and EVOO together in a mixing bowl until smooth.
In a separate bowl, combine shallots, cucumbers, olives, lemon juice and zest, fresh mint and salt and pepper.
Serve each burger with a dollop of whipped feta and garnish with the cucumber salad.
