SESAME BALLS with tinned rockfish

This is SO delicious. The recipe might seem intimidating, but this is a very easy snack that will impress.

Ingredients

For the filling:

1 lb ground pork

3 tins Rockfish in Sweet Soy Sauce

1 bunch scallions, sliced

2 oz garlic, minced

2 oz ginger, minced

1 each whole egg

1 Tbsp szechuan peppercorn, toasted and ground

1 Tbsp cornstarch

For the dough:

120g brown sugar

120g glutinous rice flour

120g water, boiling

140g room temp water

240g glutinous rice flour

For assembly:

untoasted sesame seeds

fryer at 325F

Preparation

For the filling

Mix all ingredients in a large bowl until thoroughly combined. Keep cold and set aside.

For the dough

Mix the brown sugar, boiling water and first measurement of glutinous rice flour together until a paste forms. Then add the room temperature water and the last of the rice flour. Knead the dough until it is smooth. Cover with plastic or a damp towel while you are working so the dough does not dry out.
