Fancy Fish Toast
A fancy toast featuring tinned octopus!
Ingredients
1 cans Tiny Fish Co. Octopus with Dill & Lemon
1 large eggs
1 small fennel bulb, sliced thin
2 stick celery, sliced thin
1 small meyer lemon, sliced into quarter moons
3 sprig dill
1 drizzle olive oil
3 slice rye bread
1 tbsps butter
1 small shallot, sliced thin
Preparation
Bring a small pot of water to a boil. Add your eggs in gently and boil for 6-7 minutes. Remove and place into cool water.
Butter each side of your bread and toast in a cast iron pan until golden brown on each side.
In a small bowl, mix together the octopus, sliced fennel, shallot, celery and meyer lemon with a pinch of salt and drizzle of olive oil.
Peel the eggs, then smash onto the buttered toast. Place the octopus mixture on top. Arrange the dill or other herbs and then finish with another drizzle of good olive oil.
