Miso Maple Carrots
I can’t get enough of these carrots. A traditional dish with an Asian additive perfectly highlights my family’s “east meets west” Thanksgiving dinner.
Ingredients
Serves 8
2 pounds whole carrots
3 tablespoons olive oil
3 tablespoons miso paste
½ teaspoon apple cider vinegar
1 tablespoon maple syrup
¼ teaspoon salt
Sesame seeds
Preparation
Preheat oven to 425 °F. Place carrots in a sided sheet pan. In a small bowl, mix olive oil, miso paste, apple cider vinegar, maple syrup, and salt until smooth. Pour mixture onto the whole carrots, coating evenly. Roast for 20 to 25 minutes until tender, rotating carrots as they roast. Garnish with sesame seeds.
