Chipotle Tofu Steak

A firm slab of tofu can be a lighter substitute steak. The tofu retains the dark color from the marinade and has a surprisingly rich taste. This is vegan friendly!

Ingredients

Serves 4

2 tablespoons canned chipotle peppers in adobo sauce, finely chopped 1 tablespoon yellow mustard 

2 tablespoons honey 

2 tablespoons sesame oil1 teaspoon soy sauce 

1 (16-ounce) box firm tofu (cut into 8 pieces, lengthwise) 

3 tablespoons vegetable oil 

Chopped scallions, for garnish 

Preparation

In a blender , blend  chipotle peppers, 1 tablespoon adobo sauce reserved from the can, mustard, honey, sesame oil, and soy sauce. Lay tofu into a small container. Pour mixture on top and let sit for 1 to 2 hours or overnight to marinate.

In a large pan on medium-high heat, add vegetable oil. Take tofu out of marinade, and sear tofu on both sides, 2 to 3 minutes per side. Remove tofu from pan. Pour remaining marinade into the pan and simmer for 1 to 2 minutes. Pour over tofu and serve. Garnish with scallions.
