Grandmother's Fruit Cobbler

This is my grandmother’s recipe for fruit cobbler, a staple in our house growing up. I think the peach version is best when peach season is popping. It goes great with ice cream or whip cream or even a dollop of creme fraiche.

Ingredients

1 cup AP flour

1 cup granulated sugar

2 1/2 teas baking powder

1 teas salt

1 teas vanilla extract

3/4 cup whole milk

5 cups seasonal fruit

Preparation

Preheat the oven to 350F.

Prep the fruit if needed (e.g. peel apples, cut, etc) and set aside.

In a 9x13 baking dish add 3 Tablespoons butter and place in oven to brown (about 7-10 min/stay close and check often :).

Meanwhile, mix the flour, sugar, baking powder, salt in a medium bowl. Add the vanilla to the milk and slowly whisk into the dry ingredients.

When the mix is smooth, check the butter. When brown remove the dish from the oven and pour the batter into the dish. Scatter the prepared fruit onto the batter evenly and top with a light sprinkle of brown sugar.

Replace the dish in the oven and bake for 30-45 min or until center of batter is fully cooked.

Allow to cool for about 30 min then serve!

My Grandmother's Fruit Cobbler

My mom and I make a House staple (my house, hehe): Fruit Cobbler. She grew up eating this and I did as well. When peach season is prime this is glorious but don’t discount this mixed berry version either. They both slap.
