Vegan Fonio with Coconut and Chocolate Pudding with Fresh Berries

Serves 4

Ingredients

* 2 cup coconut milk (more as needed)


* 1 teaspoon vanilla extract


* 2 tablespoons of honey (or any sweetener of your liking


* 1/2 cup raw cacao powder

* 1/2 cup dried shredded coconut


* 1 cup cooked fonio 


* Pinch of sea salt


* 1/2 cups of fresh berries


* 2 tablespoons cocoa nibbles (or chopped dark chocolate)


* Shredded coconut dried unsweetened, toasted


Preparation

1. Add the coconut milk in a saucepan on medium heat and bring to a simmer. Add the vanilla extract and stir well. Add the honey, cacao powder, dried coconut, and sea salt.

2. Add the cooked fonio and fold until well combined. Continue cooking, stirring occasionally, until the fonio has absorbed most of the liquid but still moist, for about 2 to 3 more minutes. Turn off the heat

3. Gently fold in the cocoa nibbles or chopped dark chocolate.

4. Place the bowl back in the fridge for at least 30 minutes to let the pudding firm up.

5. Serve cold or at room temperature, with fresh berries, a sprinkle of cacao powder, and toasted coconut.
