Cream of tomato soup!

The perfect fall soup with grilled cheese sandwiches


Cook 8 strips of bacon until crispy.

Remove the bacon from the pan and save the bacon for your grilled cheese sandwiches.

Sweat 1/2 chopped Spanish onion, 1 chopped shallot, 4 chopped cloves of garlic.

Add 5 chopped tomatoes and remove the seeds.

Add one peeled, diced potato

Add one quart chicken or vegetable broth

Add 10 leaves of basil

Bring everything to a boil and simmer for about 20 to 30 minutes

Place the mixture in the blender until smooth and then add 1 pint of half-and-half, 3 ounces of extra-virgin, olive oil, sea salt, and cracked black pepper, and three small cans of stewed tomatoes.
