Corn and lobster chowder

Lobster and Corn chowder!


4 ounces olive oil

2 sliced shallots

8 cloves of chopped garlic

One bottle dry white wine

1 quart chicken broth

1 chopped onion

5 ears of corn- remove kernels from the cob

2 peeled and diced potatoes

16 ounces half and half

3 (1.25 pound) lobsters 🦞


Sweat Garlic, onions and Shallots in olive oil

Add white wine and reduce by 1/3

Add chicken broth

Add the corn cobs and place live lobsters in the broth.

Cover the pot and cook lobsters for 7 minutes.

Remove the lobster. Let them cook and then remove the lobster meat from the shells.

Chop the lobster meat and place in the refrigerator.

Take all of the lobster bones and add to the broth.

Simmer the broth for 30 minutes and then remove the corn cobs and lobster bones from the broth.

Add the corn, 1/2 and 1/2 and blanched diced potatoes

Season with sea salt and black pepper

When you are ready to serve, add the lobster meat to the soup.
