You don’t need to wait for Hanukkah, to eat brisket!

Growing up, Hanukkah, Brisket and Latkes were always the best gift! 

Feeds 6-8 people

6 pound brisket

1/2 pound bacon

1 bottle red wine

1 whole onion

1 quart chicken stock

1 pound red bliss potatoes

1 pound chopped carrots

Sea salt

Cracked black pepper

4 ounces vegetable oil.

Method

Render bacon until crispy and remove bacon from the large pot

Add vegetable oil to the bacon fat

Season brisket and sear the meat until golden brown on all sides

Add chopped onions and sauté until brown

Add wine and chicken stock

Bring to a boil and simmer.

Cover pot and simmer for 3 hours.

Turn meat over a few times during the process.

After three hours add the potatoes and carrots and cover the pot for the final hour.
