Ingredients

1 cup mango, cut

2 medium Jalapeno, Chopped, remove pith and seeds

1 large Cucumber, Peeled and chopped

1/3 cups Olive Oil

1/4 cups Apple Cider Vinegar

1/4 cups Coconut Nectar

2 tbsps Lime Juice

1 1⁄2 tsps Sea Salt

1 tsps Cumin

1 teaspoon Pink Peppercorn, fresh ground



Preparation

Blend all ingredients together.

Serve.

Store in a glass container and refrigerate.

This session is part of a five series of exploring the deliciousness of different peppercorns.

Pink peppercorns are the berries of the Peruvian pepper tree, Schinus molle, and are native to South America. Although they are called "peppercorns," they are not related to the black, white, and green peppercorns that come from the Piper nigrum plant. Pink peppercorns are slightly sweet and slightly spicy, with a mild flavor that is unique to them.
