The Best Oatmeal Cookies

Who doesn’t love a great oatmeal cookie? Well these are the best! Especially with a cold glass of almond milk!

Ingredients

Wet Ingredients

1/2 cup coconut oil, melted

1/2 cup brown sugar

1 tablespoon cinnamon

1/2 teaspoon sea salt

1/2 tablespoon vanilla extract


Dry Ingredients

1 cup All Purpose Flour or gluten free flour

1 cup gluten free rolled oats

1/8 cup arrow root

1/2 teaspoon baking soda

1/2 teaspoon baking binder (I used Pamela’s brand which is xanthan and guar gum free. It’s a mixture of potato starch and psyllium)


Additional Ingredients

1/2 cup raisins

1/2 cup dried cranberries

1/2 cup unsweetened apple sauce (refrigerated)



Preparation

Preheat oven at 325 degrees F.

Prepare a parchment lined cookie sheet.

Mix all the wet ingredients together a set aside.

Mix all the dry ingredients together and then mix in wet ingredients until combined.

Add raisins, dried cranberries and then cold apple sauce and combine well until you have a dough. It will be slightly tacky.

Use a small scooper and scoop cookie dough on to prepared cookie sheet. Flatten the cookie dough slightly.

Place in oven and check 17 minutes in. Cookies will be done in 17 to 23 minutes.

Remove from oven, let cool slightly and then place on cooling rack.

Serve slightly warm or cool completely.

Keep stored in an airtight container.

It is cookie season and holiday cookies tend to take center stage but the oatmeal cookie is holding strong and winning hearts.

Oatmeal cookies are my favorite and go to cookie, no matter the season!
