Ingredients
1 cup walnuts
1 cup pecans
1 cup shiitake mushrooms
1/2 cup sun-dried tomatoes, soaked in water for 30 minutes
3 garlic cloves
2 tablespoons nutritional yeast
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon sea salt
1/2 teaspoon onion powder
12 baby romaine (gems) leaves
Garnish: fresh cilantro, sliced avocado, lime wedges, salsa, vegan cheese
Preparation
In a food processor, pulse together the walnuts, pecans, shiitake mushrooms, and sun-dried tomatoes until finely chopped.
Add the garlic, smoked paprika, cumin, chili powder, sea salt, onion powder, and nutritional yeast, and pulse until everything is well combined.
