Red Anjou Pear, Fennel & Jicama Salad w/Jalapeno Vinaigrette

Ingredients
2 cups Red Anjou Pears, julienned
2 cups Fennel, julienned
2 cups Jicama, julienned
2 tbsps Olive Oil
2 tbsps Lemon Juice
1 tbsps Jalapeno, minced
1 1⁄2 tbsps Mint, minced
1 tsps Sea Salt
1/4 tsps Fresh Black Pepper
Preparation
In a medium size bowl toss all the ingredients together.
Chill for thirty minutes and serve.

When using the Jalapeno Vinaigrette there is no need to add the lemon juice and olive oil as noted above.
