Raw Vegan Dehydrated Sun-Dried Tomato Crackers
These delicious crackers are made from a combination of sun-dried tomatoes, flax seeds, grated zucchini, diced red onion, lemon juice, garlic, sea salt, grated apple, tamari, Italian seasoning, and ground white pepper. They are easy to make and can be enjoyed as a snack on their own or as part of a larger meal.

1 cup sun-dried tomatoes
1/2 cup flax seeds
1 medium zucchini, grated
1/4 cup diced red onion
2 tbsp lemon juice
2 garlic cloves, minced
1 tsp sea salt
1/2 small apple, grated
2 tbsp tamari
1 tsp Italian seasoning
1/4 tsp ground white pepper
Preparation
In a food processor, combine the sun-dried tomatoes, flax seeds, grated zucchini, diced red onion, lemon juice, garlic, sea salt, grated apple, tamari, Italian seasoning, and ground white pepper.
Process the mixture until it is well combined and forms a dough.
On a paraflex sheet spread the dough into a thin, even layer.
Score the dough into cracker-sized squares.
Dehydrate the crackers in a dehydrator at 115°F (46°C) for 6-12 hours, or until they are dry and crisp.
Store the crackers in an airtight container at room temperature for up to 1 week.
