Creamy Herbed Spinach Dip

Ingredients

1 12 cups Pine Nuts, soaked, drained and rinsed

1 cups Baby Spinach, chopped

1/3 cups Water

2 tbsps Olive Oil

2 tbsps Lemon Juice, Fresh squeezed

2 clove Garlic, chopped

1 tsps Sea Salt

1 pinch Ground Nutmeg

Preparation

Blend all ingredients together in a blender until creamy and smooth.

Additionally, fold in your favorite herbs; basil, tarragon, oregano, mint, cilantro or a mixture.

Chill for 1 to 2 hours and serve with a crudites, tortilla chips or crackers.
