Raspberry Coulis Coconut Cacao Mousse

Ingredients
2 cups young Thai coconut meat
3/4 cup coconut nectar or maple syrup
1/4 cup cacao powder
1/4 cup coconut water
1 tablespoon vanilla extract
1/4 teaspoon sea salt
Raspberry Coulis
2 cups fresh raspberries
1/4 cup maple syrup
1 teaspoon vanilla extract
Pinch of sea salt
Preparation
Blend coconut meat, sweetener, cacao powder, vanilla extract, and sea salt in a high-speed blender, adding coconut water as needed, blend until smooth and creamy.
Place all ingredients in a high speed blender and blend 30 seconds.
Evenly portion raspberry coulis at the bottom of four dessert glasses. Add coconut cacao mousse on top.
Chill for two hours.
Garnish with coconut shreds, fresh raspberries, cacao nibs and edible flowers and serve.
