Herbed Cauliflower Rice

Ingredients

1 medium head cauliflower florets

3 cloves minced garlic

1 cup chopped parsley

2 tablespoons chopped basil

2 tablespoons chopped dill

2 tablespoons chopped chives

2 tablespoons extra virgin olive oil

1 tablespoon minced garlic

1 teaspoon sea salt

1 teaspoon fresh ground white peppercorn

Preparation

Place washed cauliflower florets in food processor and pulse to a ‘rice’ texture

Grind white peppercorns

Placed riced cauliflower into a medium size bowl and add all other ingredients. Toss well.

You can also add additional ingredients like diced red onion, or sliced cherry tomatoes for more flavor and texture.

Serve room temperature or saute quickly and serve.
