Fonio Tabbouleh Salad
Fonio is a delicious and nutritious sub grain that works nicely as an alternative, gluten free grain for tabbouleh.
Ingredients
2 cups cooked fonio (I use Yolele fonio)
1 cup parsley, leaves finely chopped
1/4 cup bunch mint, leaves finely chopped
3 Persian cucumber, peeled and diced
2 cups Roma tomatoes, halved
1/2 cup kalamata olives, pitted and chopped
Lemon Vinaigrette
2/3 cup fresh squeezed lemon juice
1/2 cup extra virgin olive oil (EVOO)
1 teaspoon Dijon mustard
1 teaspoon salt
1/2 teaspoon black pepper
Preparation
Follow the instructions for preparing fonio.
Once the fonio is cooled and in a large bowl and combine with all the other ingredients.
Lemon Vinaigrette
Whisk all the ingredients into the fonio mixture and gently toss to coat well.
Serve and enjoy!
