Crispy Baked Parmesan Zucchini Sticks
Delicious, satiating and easy to make!
These Crispy Baked Parmesan Zucchini Sticks will become a family favorite.
Ingredients
2 large Zucchini
Batter
1 cup All Purpose Flour
1/2 cup vegetable broth
1 teaspoon corn starch
1/2 teaspoon sea salt
1/2 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon smoke paprika
1/4 teaspoon black pepper
Bread Crumb Mixture
1 1/2 cups bread crumbs
1/2 cup parmesan (VioLife is the brand I use)
1/2 garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
Preparation
Preheat oven at 425 degrees F.
Cut the zucchini in half and then in half again, creating medium sized sticks (each one about 2 inches long).
Prepare the batter. In a medium bowl, whisk all the ingredients together until well combined.
In a separate bowl combine all the ingredients for the breadcrumb mixture.
Dip the zucchini sticks into the batter and then dip them into the breadcrumb mixture.
Place the zucchini fries onto a large parchment-lined baking tray and bake at 400°F for about 20 minutes, until crispy and golden brown.
