Ingredients:

4 cups cauliflower florets

1/2 cup macadamia nuts, soaked overnight

1/2 cup fresh parsley, chopped

1/4 cup water

1/4 cup nutritional yeast

2 tbsp extra virgin olive oil

1 tsp sea salt

1 tsp freshly ground white peppercorns

1 tsp garlic powder

Preparation

Instructions

Rinse and chop the cauliflower into small florets.

In a high power blender, blend the soaked macadamia nuts until they are finely chopped.

Add the cauliflower florets, extra virgin olive oil, nutritional yeast, sea salt, ground white peppercorns, garlic powder, and water in the blender.

Blend the mixture until it becomes smooth and creamy, about 2-3 minutes. You may need to scrape down the sides of the blender vessel a few times.

Pour the mixture into a serving bowl and fold in the chopped parsley.

Taste the mash and adjust the seasoning to your liking. Add more salt, pepper, or nutritional yeast if desired.

Serve the cauliflower and parsley mash as a side dish or as a topping for crackers or veggies. Enjoy!
