Mushroom + Beef Bolognese

Whenever I make Bolognese, I feel like I’m killing it at life. I’m tapping into my Italian roots and making a rich sauce that always seems to be able to stretch for as many people, and portions, as I want. The house smells like Italian heaven, where I imagine there is always a pot of sauce simmering. My kids all eat dinner, with no complaints—and even ask for seconds. And with this version of Bolognese, I know that they eat twice as many veggies (mushrooms, onions, celery, carrots, tomatoes!) as beef. It’s a Tuesday, the red wine is flowing, and life is good.
