Jerk Pineapple Pizza
This Jamaican Jerk Pineapple pizza is a little sweet, savory, spicy, all of the things!
Ingredients
2 boneless, skinless chicken thighs
3⁄4 cup Caribbean jerk marinade
1 thin pizza crust, ready made
1⁄4 cup barbecue sauce
8 ounces monterey jack pepper cheese, shredded
1⁄2 cup thinly sliced roasted red peppers
3⁄4 cup grilled pineapple chunks
1 tablespoon dried thyme
Preparation
Cut chicken into thin slices. Marinate chicken thighs in jerk marinade in refrigerator, at least 1 hour, up to overnight.
Remove from marinade; discard marinade. Preheat the oven to 375 degrees F.
Saute chicken in a non-stick pan over medium-high heat until cooked through, about 5 to 7 minutes.
Spoon BBQ sauce over the pizza crust.
Spread the cheese over the pizza crust.
Top pizza with sliced chicken, red peppers and pineapple.
Sprinkle lightly with dried thyme before baking.
Bake for 20 to 25 minutes or until crust is golden brown. Cut and serve.
