Fried Chicken Nachos
Take your nachos to the next level with these Fried Chicken Nachos.
Ingredients
2 skinless, boneless chicken breast halves, cut into large bite-sized chunks
2 tablespoons vegetable oil, plus more for frying
1 teaspoon cayenne pepper, or to taste
1 cup flour
2 tablespoons Tastic Spice Original
1 egg plus ¼ cup water
1 cup panko
1 (12 ounce) package corn tortilla chips, or as needed
1 (8 ounce) package shredded Mexican-style cheese blend
1 (7 ounce) can diced green chilies, drained
1 cup of coleslaw (optional)
Hot sauce (optional)
Preparation
In a medium bowl, stir together the chicken, vegetable oil, and cayenne pepper. Let stand for 15 minutes, or longer if desired.
Place flour with Tastic in one bowl. Place egg wash in another bowl. Place panko in a 3rd bowl. Dip each piece of chicken first in flour, then the egg wash and finally the panko. Set aside.
Heat a skillet over medium-high heat. Add 1/2 inch of oil and heat over medium high heat until the oil sizzles when you dip in a piece of chicken. Add the chicken mixture, and fry until chicken is golden brown on the outside and chicken is no longer pink on the inside. Remove from heat, and set aside.
Preheat the oven to 325 degrees F (165 degrees C). Spread a thin layer of tortilla chips in a 9x13 inch baking dish.
Sprinkle 1/4 of the chicken, 1/4 of the chilies, and 1/4 of the cheese over the chips. Repeat layers ending with cheese on the top.
Bake for 15 to 20 minutes in the preheated oven, until the cheese is melted and everything is heated through. Add coleslaw and hot sauce or your favorite nacho toppings.
