Montana Max BBQ Street Corn
Let’s dive into this EASY and FLAVORFUL grilled Montana Max BBQ Street Corn! Fresh sweet corn is brushed with a seasoned mayo with lime zest, topped with Montana Max’s delicious BBQ seasoning, sprinkled with cotija cheese and fresh cilantro!
Ingredients
4 ears fresh sweet corn, husks pulled back and cleaned
1/4 cup mayo with olive oil
fresh lime juice, from 1/2 lime
lime zest from 1 lime
Montana Max’s BBQ seasoning
1/4 cup cotija cheese, crumbled
fresh chopped cilantro for garnishing, optional
Preparation
1. Soak the corn in the husks (cleaned) in water for 1 hour (this will help ensure corn husks do not catch fire and will help with steaming process). Do NOT skip this step.
2. Preheat an outdoor grill/smoker to 350 degrees (or medium high heat).
3. To a small bowl, add the mayo, lime juice, & lime zest and stir to combine. Set mixture aside.
4. Add the corn in the husks to the preheated grill/smoker, and grill for about 15 minutes, or until corn kernels are tender and cooked (rotate corn as needed to ensure even cooking, and monitor the cooking to ensure husks do not catch fire)
5. Remove corn from grill, pull back husks, and lightly brush all ears with the mayo-lime mixture
6. Sprinkle all sides of corn with BBQ seasoning to taste
7. Sprinkle next with cotija cheese
8. Garnish with chopped cilantro and serve warm to your guests!
