Mediterranean Meatball Pitas
Make our Mediterranean Meatballs!
Ingredients
INGREDIENTS:
1 pound Ground Beef
1/4 cup dry breadcrumbs
1 egg
2 tablespoons chopped fresh parsley
2 tablespoons water
2 teaspoons minced garlic
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
4 flatbreads (our homemade naan bread is what we used)
Toppings:
Fresh baby spinach
Thinly sliced half-moon/chopped tomatoes,
Thinly sliced half-moon/chopped cucumber
Red onion, thinly sliced/chopped (optional)
Fresh parsley, chopped
Homemade or store-bought Tzatziki sauce
Montana Max’s Mountain Magic Seasoning (to taste)
Preparation
1. Heat oven to 400°F. Combine Ground Beef, breadcrumbs, egg, parsley, water, garlic, cumin, salt and pepper in large bowl to thoroughly combine. Shape into 12, 2-inch meatballs.
2. Thread 3 meatballs on each of 4 skewers. Place on rack in broiler pan that has been sprayed with cooking spray. Bake in 400°F oven 25 minutes or grill outdoors to internal temp of 165 degrees.
3. Remove meatballs from skewers.
4. Time to plate! Place warm naan bread on serving plate, then layer all the toppings and meatballs. Garnish with parsley and sprinkle of feta. Serve warm and enjoy!
